also shred your own cheese so it melts properly, and use more of it. preshredded cheese is covered in potato starch so it won't combine into the layer you'll want on pizza. you'll get better at the dough shape with experience too.

I posted one of my pies in another thread and anon said it looked good so I am now the resident expert. First thing, you must have a pizza stone. Second is you want to use a good 00 flour. I use Ken Forkish same day dough, link below. For sauce, buy a can of San Marzano tomatoes and crush them yourself. Takes two minutes. I don’t bother shitting it up with any seasoning because it stands fine on its own. If you’re not gonna use fresh mozz, you can use a mix of whole milk/part skim. As far as toppings go, if I’m adding anything it’s prosciutto and basil after the pizza is out of the oven. Do what you want there, just don’t be a fag.

My broiler is on top, so I put the stone on the top rack and crank that bitch up. Make sure you give it a good 20-30 minutes to come to temp. Throw your pizza in, keep an eye on it and it’s done in about 3-4 minutes.

When working the dough out, it will tell you to go fuck yourself a couple times. Put it in timeout for a few minutes, it will relax and you can continue shaping. Don’t obsess too much over the shape itself, you’re gonna eat it not hang it on the wall.

Thank you for the write up. I just finished making the pizza and it turned out sub-par. I used a pre-mix dough though and canned sauce. The cheese just slides right off the dough, I may have used too much water. I will try your version tomorrow for lunch.

Last thing I forgot is to make sure you have a good amount of flour on your peel/baking shit so it slides off easily. Nothing worse than missing a spot and having your shit Stretch Armstrong all over the place.
