Wait a minute, the soda at restaurants is just prepackaged syrup mixed with water?

I thought they shipped in soda in like barrels and had a reservoir tank like a gas station. If it's just syrup mix why are sodas so expensive?

They jack up the price so they can afford to sell other things at near-cost. The cost of your soda to the restaurant is about a dime, less if you don't get a cup+lid+straw.
Knew a guy who owned a restaurant, and he said soda is the second-lowest-cost food item to a restaurant (or any other place that serves food, like a gas station): the bulk of the cost of a drink is actually the disposable cup. The cheapest are those slushies, because they're basically the same as soda, but use even less syrup.

been a while since i did the math
5 gallon bag in boxes are about $80 from our distributor. (don't believe higher prices online--those are resellers with shipping costs inflated because these fuckers weigh about 30 pounds and cost about their full value to ship)
640 ounces are in 5 gallons
water is mixed with syrup 5:1 in the machine. this can be adjusted, usually syrup is lowered rather than raised.
we sell 22 ounce cups at $2.15 tax incl., so 22/6=3.66¯
640/3.66 is 174 refills per BIB
yields $375.96, for a $295.96 profit, and the actual cost of your drink to the restaurant is about 46 cents. this excludes other COGs like cups straws and lids because i don't recall the prices on those right now. the market is wacky for plastic at the moment.

protip 1: ask for no ice, nobody cleans their ice machines anywhere. no exceptions. if the ice machine is built in to a soda fountain, don't buy a drink. this is the case for most coke freestyle machines. they have hoshizakis installed on top. those things are mold havens. if a task involves expending effort AND getting up on a ladder, nobody is doing that shit and you know it, don't fool yourself.
protip 2: if the machine is self-serve don't buy a drink, go to the machine first, twist the black nozzle clockwise and pull it off. just do it and don't be a bitch about it, no it's not "against the rules" nobody who works there gives a fuck that you're doing this. there's a white or transparent cap under it as well, that's the diffuser/internal mixer. pull down on it and pull it out and take a look at it. if it's blackened anywhere that's mold. don't buy a drink. the earliest mold growth starts inside the series of holes around the top. your water and syrup is dispensed through those holes. mold growth does not happen quickly on these parts. it takes 3-7 days depending on the environment. that's a long amount of time of not cleaning the soda machine. it's supposed to be a daily task in every restaurant.

its the same with kegged beer you get on tap, it starts out flat and is carbonated at the bar
the good thing about this way of doing things is that you can regulate carbonation pretty easily and change it when needed, so if you have a half full container of flat soda, you can recarbonate it which requires more co2 than if it were full
and since its a syrup it makes transporting easier rather than dealing with heavy and expensive kegs or fragile and volatile bottles

>unlikely to get sick from a soda machine.
some people are more mold-sensitive than others, i offer some simple advice for avoiding such easily-avoidable food-borne ailments. it's not really a waste of time, just twist the shit off and take a look. i'd encourage people to know and perform this more often when you get drinks from a machine that's self-serve and open to the general public. mold exposure can excite fever and lack of appetite even in small doses. not cleaning a soda fountain or ice machine are the single most common restaurant offenses, trust me. nobody's gonna knock you for checking their oversought work.

another not fancy trick you can do is poke around the drip tray valves under the overflow trays of any soda fountain. they're usually plastic holes that derive from the ice chamber and end in the overflow tray. they exist to expunge melted ice water from the ice chamber above which is of course another mold haven. you will most certainly find black mold on them and you shouldn't find this surprising, but what's more interesting is if you poke a finger or straw up those holes, especially in coke machines, it'll sometimes excrete a white, extra large tablespoon-sized, mucous consistent clump of mold. i've heard the term 'coke snot' thrown around in this industry to refer to the stuff, but have yet to find any concrete information on what the fuck the stuff actually forms from or what it's mostly comprised of. i can't find any good search results on the term and this pic from r*ddit is the closest i can show how it looks. if you can just imagine it's not dyed brown that's what it always looks like.

if you can conceivably throw away your ideas that the general public or people who work for them are to be 'trusted' then you'd probably also be curious about what weird chemistry science experiments you're allowing them to microdose into your body. from my decade long experience in food i'd say no thanks to that sort of negligence tyvm.

you cant brew beer in a thick syrup then add water. brewing requires a certain ratio of water to malt. you can carbonate it but you cant reduce it down to a syrup, because it would lose its flavour (and alcohol) from the heat. coke is just sugar syrup mixed with spices and additives with carbonated water added, even from the factory. its not any different.

costs aren't just for b.i.b. syrup.
there's the water filter and co2 tanks as well.
there's also the fact that if it's a self serve fountain, customers can just skip the ice and get more soda, depleting the supply faster.

Well yea it's all just soda water and syrup. Pretty obvious when you think about it. I learned this at 14 when I got a McJob.
Either way soda is really bad for you and you should just avoid drinking it all together.

Why wouldn't it be expensive?

Don't you people have the syrup in the stores? I learned this when making soda at home.

They lose money on buffets, make money on beverages.
