I don't go to these places to eat. I go to have unusual beers with my friends that I'm not willing to buy packs of at the liquor store. I suspect most of them sell food for one of two reasons
a. Local law requires them to sell food so as not to be classed as a bar (e.g. in MA)
b. The owners are passionate about beer but unfortunately it is not profitable to run a bar that serves only beer, so they serve food too to attract fatties and turn a profit while still getting to run the kind of business they want
