I really don't get the purpose behind a bolster that reaches all the way to the edge. Especially on german knifes that are designed for a rocking motion. You intuitively cut with the heel because it requires the least amount of motion when rocking the knife but then they go and blunt that part. Some are even worse, where the bolster extends down further than the edge, so the heel can't sit flush with the cutting surface.

As I said--safery my man. Aside from the cutting edge it's the most useful part... unless you suck at life than it's the most dangerous part. I use it to eye potatoes and start some cuts. Can be used instead of the point (easier actually) thus is more dangerous to amateurs. Ops knife is like supercar with a government set to 80mph.

I really don’t get the purpose of crying about it.
I’ve never heard anyone screech about it on such an emotionally-charged level as some of /ck/ does.
The only realistic disadvantage I can think of to the design is not being able to simply drag the entire length through some shitty pull-through sharpener.
But I don’t use shit sharpeners so that wouldn’t apply to me if I owned a knife of that design.

Some good advice I got from my first chef was to make stir-fry with lots of veg for your meals, cut cheap bits of beef or chicken into shaved bits as well. Watch a video for good form, keep your fingers safe and use your knuckles as a guide. Remember that the goal should be cutting food into same sized chunks, not cutting quickly for show. You likely will not get the speed etc from being a home cook alone.

my only advice besides practice is not to hesitate to reposition your body or even the cutting board a lot. It will sound stupid to some people but I found myself standing really rigidly and never orienting the ingredients to line them up better with the knife, or flattening out garlic when I'm trying to fine chop it, things like that.

Anyone else here really tempted to take their own knives with them when visiting people? I've been using the same two Ikea chef's knives and honing rod for about five years (I use the honing rod just about every couple of days), so my standards really aren't that high. Still, every time I cook at someone else's place, they always have the tiniest cutting board imaginable and knives that take a dangerous amount of pressure to get through an onion.

That being said, if I ever graduate and get my first paycheck, I'm going to splurge on a >$100 knife. Can't really imagine how great the difference will be.
