I brewed (?) my first batch of apple wine this autumn. My grandam has got an orchard, so everything was naturally sourced. Came out quite decent, especially wen chilled it's a good drink to have with meat pies. Had some for Christmas Dinner. Really comfy stuff, especially now with temperature getting around -20 deg C.

I brewed 25L of white wine last year, yea, its not "good" but around a $1/L suddently the perspective changes.
And it was fun

I have some white rum thats needs to age another year. Its just starting to taste sweet and smooth now. Gonna make some whiskey next month. Have to gather up all and clean all my supplies.

I recently started all grain brewing and I think I've got a good grasp on the process but my efficiency is absolute shit, typically in the 30's, maybe 40's if I'm lucky. I fly sparge but I think my sparge arm is garbage, it's a cross style PVC arm and I typically finish sparging a 5 gallon batch in like 5 minutes, is that the main culprit?

developing new recipes is a bit of a pain but mostly it's born out of laziness because you just decided to gather all your extra grain and just steep it maybe because you bought a little too much in previous runs
with all grain brewing even if you follow a recipe every time you brew its gonna be different tasting so going out of your way to come up with something new isnt a great method of new recipes
instead you should follow an all grain recipe with all the ingredients it calls for, and if you think you should add or remove a few things to improve the taste or use different methods, that will become a new recipe
but in all unless you have a specific idea for something you cant really find you should probably just leave recipes to whats tried and true with a little variation
