Good afternnon sloppa chads, Big Papa Sloppa here! I made a delicious egg curry with hard boiled eggs the other day. Have any of you scholars of sloppa made anything good? Pic related: it's the curry.

I tempered some cumin seeds in ghee (I would have tempered a few other ingredients but was out)
Cooked two Pureed onions
added ginger garlic paste followed by pureed tomatoes
Added a slit pepper (I had serrano so I used that, some people might complain about authenticity for using a Mexican pepper but they can deal with it)
Add spices (garam masala, kashmir chili powder, salt, coriander powder, a little sugar)
Cook more and add hard boiled eggs with a few holes pricked in them, cook a little bit longer to warm up the eggs
crushed some kasurmi methi in my palms and stired it in
Served it (I forgot to put garnish with coriander leaves)

I ate it with roti I made (not pictured)

I would estimate I eat sloppa for about 6 meals a week. When I make sloppa I tend to make a lot and have leftovers.

I'm going on a fridge/freezer cleaning mission over the next few weeks. The first step's going to be Christmas leftover stew - burned sugar, dark roux, turkey, potato, turnip, carrot, sprouts, tomato, onion, garlic, a little cumin, a little cinnamon, a little allspice, a lot of black pepper. Some of the freezer space is taken up by some mutton phall, some red thai curry with chicken, porkolt, gumbo, and some coq au vin.

I got some at a local Latino grocery store, it was like $6.29 a pound and I got about 3lbs for $19. I would suggest if you pre cook the meat be careful because I over cooked the goat a little bit and it was a bit tough, these were all the ingredients I used

I love curried eggs. I make them every time eggs go on sale, but never twice in just the same way.
I did rum/raisin once and it was really good.
An easy and cheap dish to make and enjoy.
I like to keep everything coarser than you, it would seem, but that's a matter of taste.

I don't really know what would be the point of the ground sage and tarragon, but sounds interesting. And how would you use the apples? Having whole cumin seeds and cilantro would be nice as well. I like to make goat curry "rogan josh" style which has crushed fennel, which is pretty similar to the tarragon I guess

The sage, tarragon, and cracked pepper were for the goat because I pre roasted it, and you core and slice the apples and add them at the very end of the simmer. They become puffy soft pieces that soak up all the broth and impart some of the apple flavor into the curry as well

I'd say 8/10 wild ideas I have are absolute wins for me. The other 2 being either a passable mistake I don't try again or a totally fucked up dish which I've come to accept every once in awhile. Another prime sloppa I made was chocolate habanero venison chili and that shit was CASH
