So what's the deal with premium gas ranges/ovens? I don't know anyone who actually has one in their house, and the price difference is like $4000+ for brands like Wolf, ZLine, SMEG, Kitchenaid, but the features and BTUs and oven convection don't actually seem better in any significant way? What's the fucking point? To fleece rich idiots?

They're all around nicer, they're certainly not WORTH that much more, but if you've got the dosh to spend and want something higher quality feeling, they certainly fit the bill.

Ours was around $5k, but this one is a decade old at this point.

Anyway I mostly ask because we are upgrading and I am keen to get a range top w/ dedicated wok burner and the luxury brands are more commonly offering them.

I mean yeah, they're worth it for the more unusual features (wok burners being one).

Just realize, you're paying 2-3x as much for those features, it's not going to perform 2-3x as well, or be 2-3x better quality.

It's better quality, and it could perform a bit better than cheaper offerings, but you're primarily paying for the odd features, and the slightly better quality.

and yeah, we have a decent copper collection.

I don't have a picture of just my range or oven, but I like Blue Star over Wolf. Their warranty and shit was better in my opinion and I think that was the right choice. There was a design flaw in the liner for my oven that made it crack twice, so they sent me an upgraded newer version to replace the whole oven the second time. Another thing that attracted me to Blue Star was the way the burners are designed. They have a really nice flame that covers the whole bottom of the pot and is noticeably faster at boiling water than any other oven I've had, especially when paired with a nice pot.

Blue star seems to have reliability/quality problems, nothing MAJOR, but a lot of minor issues, and with their warranty I'd expect everything to be covered and fixed, but it's potentially a hassle and a waste of your time.

Not really, commercial kitchen equipment often isn't particularly high end, just easy to fix work horses.
Not to mention they'll rarely have the proper equipment to meet consumer safety regulations so they can't legally be installed in a residential dwelling.

I looked in to this. in some cases your home owners insurance will be voided if you install a restaurant stove. they can also trigger the excessive flow valve in your gas line.

they are meant to be installed in a kitchen full of stainless steel, no wood cabinets. so you need 8 inches around them and a non flammable floor, or the stove has to be raised up a certain distance.

These companies created new lines intended for residential consumers who wanted the more durable, higher BTU gas ranges most restaurants use, but typically would not get them because commercial ranges are terrible with insulation, fit and finish, and the fancy shit like automated cooking modes that home cooks have grown accustomed to. Now these lines aren't all that much better about high powered or dispersion burners, capacity, or durability because they've found out that home cooks want the look combined with convenience most of all. There are some kick ass home appliances out there, though you'll pay even more than you would for the typical lines from these companies.

Yeah I was between Blue Star, Viking and Wolf when we were building it. While I was definitely upset at the cracked liner the company has been super willing to send replacements and fast, so I'm still happy with it. My problem with Wolf and Viking was I just didn't like the options they had for just a range and just an oven as much as what Blue Star offered. Many of my friends have Wolf so I felt a little pressured to join them but opted not to in the end. It was a hard choice.

Home owners insurance often won't cover it by default, could require paying a premium or even finding a new insurance provider that will cover it.

My local laws would require a building inspection by the permitting office and would require a custom installation with an insulation barrier on the back and sides, exterior ventilated range hood, and probably a gas shut off valve or similar that can be reached (so not something under/behind the range).

So while it's not impossible, if you're doing it, it's much easier to do during initial construction than to try and add it in later.

I have one of those faggy glass top ranges right now, and although the heat management is a bit shit you can't deny how easy it is to clean.

my range has the top sealed and the burners, pans, and such are all easily removable and go right in the dishwasher. the top is no more difficult than an induction range, and easier than electric.
