The raita is simple. A couple of shredded carrots, a couple cloves of minced garlic, a little bit of minced ginger, enough plain yogurt to get the consistency you want, 1 teaspoon each of ground cumin and chili powder. Mix well and let it sit in the fridge for a while, I made it a night in advance.

I used a can of tomato paste instead of fresh tomatoes, and 1/2 cup of kidney beans instead of the 1/4 cup called for.
