I miss Costco dinners with the family. Going there on Friday night. Wandering around, eating all the samples. Going to the food court after and grabbing a polish sausage smothered with ketchup, relish, peppers and sauerkraut, fries, gravy, chicken strips with honey dip. Yeah, those were good times.

I grew up in wisconsin and we could find poutine in a handful of places near us, and we'd get it when we went into canada, and I loved it. now nearly 20 years later I live in the south of the US and my target recently started selling cheese curds and I couldn't help myself and bought six bags of them. they aren't the greatest, but for something being readily available, it'll do. so I've been making a bastardized 'best that I can do' poutine when I'm drunk with frozen fries, mccormick gravy, and the target cheese curds. it's maybe 1/10th as good as when I grew up eating but damn if it doesn't scratch the itch.

oh yeah I could imagine, when I was a kid we'd get fresh curds from the dairy my dad worked at, they had a little store connected to their processing plant and they sold all sorts of cheeses, and curds were always my favorite. unfortunately the only ones I can find in my area are from target; I've even been to all the expensive grocery stores in my area, and nobody sells them

Nowadays, restrictions on the sale of fresh cheese mean that if they aren't sold within 24 hours of being made, cheese curds have to be cold aged for up to 2 months before they can be sold, which dries them out a little. The supermarket stuff is almost always the aged stuff, just because of the low turnaround on it.
Same, a lot of fast food places use the aged curds because they last longer and they don't have to deal with the logistics of getting fresh curds every day.
