1. just toast a bunch of dried peppers
2. in a pot boil water, add onion, garlic, tomatoes, salt and the peppers
3. leave it boiling 10 minutes or until the toasted peppers get soft
4. throw all that shit in a blender and add a splash of apple cider vinegar (not too much)

Look online for an online hot sauce shop in your country. They are usually more expensive than tobasco... per bottle. But since Tobasco is very mild comparing to most, the bottle will last you a dozen bottles of tobasco.

Personally, I bought Nothing Beyond from ostrakuchnia.pl a couple years ago. Still have half the flask, it's tasty and pretty middling regarding hotness, a good starter for anyone trying to get into hot sauces, but make your choice on your own.

Note: Da Bomb is a meme and not worth it. Yes, it's spicy as fuck. It also stinks. You can get as spicy sauces that don't suck for same price.

Why? The vinegar acts as both a flavoring and preserving agent. They aren't going to sell the fermented mash as is, it has to be diluted.

I like Tabasco sauce because it was the ubiquitous hot sauce in my house while growing up and it is good. It has certainly been surpassed several times over by many modern sauces but that doesn't mean it has gotten worse. We now have an unprecedented diversity of hot sauces available and while Tabasco isn't in my top 5 used hot sauces anymore there is a time and a place for it.

My favorite use for it is chicken pot pie and frittatas/quiche. The dominant vinegar taste and subtle fermented flavor and heat just go perfectly with these items to me.
