It's generally known as "sablefish" or "black cod" in the US and "butterfish" in Hawaii; calling it "sable" is mostly a Jewish deli thing and it's also not related to cod at all. It's a tender, fatty, mild whitefish that is delicious and under-appreciated in the US because almost all of it is caught in Alaska and then immediately sold to Japan, where it's a top-dollar fish. If you ever get the chance you should try it; it's ridiculously good.
