the too small portion, the lack of grease, the Stella, the lack of sauce.

There are many different kinds of waffles in Belgium. The ones from Liège which anon above me linked are basically soft waffles with cores of sugar spread throughout which ooze out and caramelize when it's cooked.
The huge ones I suppose is referring to the Brussels waffles, which are very light and crunchy. This seems like a halfdecent recipe for them: https://bakingwithbutter.com/belgian-waffles/
Though I'd add a couple grams of fine sugar, an egg or two more and use whole milk.

Last recipe would be what we call butter waffles, which is basically equal amounts of whole milk and flour, half of that amount in butter, 1/5th white sugar, 1 egg for every 250g of flour and some yeast. Mix the milk and butter, take some of this mixture and add the yeast. Add the yeast mixture and egg yolks to the dry ingredients, slowly stir in the rest of the buttery milk until consistent. Add in beaten egg whites, let rise for half an hour, gently stir it a bit, let it rise for another hour and you're ready to bake them.

Belgian fries (which the ones in the OP aren't) are thick-cut. They would burn before the centre was done. First you fry them at 150C until they are cooked through. Then you cool them down completely. Then you fry them again at 180C until crispy and golden brown.
