Learn what things are before you buy them.

If it's a loin like it appears to be in the picture, you can make a nice pork roast or cut it into pork chops.

If you want deli ham get it from a deli, you probably don't have an industrial meat slicer to cut it thin like you want it.

>> No.16898962

>>16898941
Pork chops are chopped pork. They chop the pork from a bigger piece of pork called a pork loin. If you chop the loin you get pork chops.

>> No.16898965

>>16898941
Pretty much, yeah. If you're cutting it thin you'll want to trim the fat, if you cut it thick then render it for a bit. All pork chops really need is salt but I also like a little cayenne or sometimes some lemon pepper, IMO the latter is best done on thin pork chops because they don't need to be in the pan for long. My dad used to make a sauce out of 50/50 horseradish and a fruit jam like peach.

If it actually is a pork loin rather than ham as speculated, season as you like (I use a Texan brand pork rub but s&p&gp is adequate), roast in the oven until around 145-150 f, rest and let carryover heat get it to 155 f then use a very sharp knife to slice as thin as possible. Even quarter inch thickness is ok for a pork loin sandwich. DO NOT OVERCOOK IT. Invest in a meat thermometer if you haven't already done so. A good sharp knife is what you need to get thin slices.

pork loin isn't sandwich meat you idiot.
Either cut it into pork chop (roughly 1 inch slices, you can also do double pork chops at 2 inches) which can be used for a variety of things, I recommend tonkatsu, where you tenderize a chop then coat in flour, coat in egg and then coat in panko bread crumbs and then fry till golden brown and crispy. Or just pan fried till done, then deglaze pan with onions and vinegar for a quick easy pan sauce.
Or you can slice it lenghtwise into a roulade, which is where you're not cutting through it but instead doing kind of a spiral cut which will unroll the log of meat into a sheet of meat, then stuff with preferred stuff, for example making a duxelle from mushrooms pan fried till brown in butter, diced onion, then add mustard to make a duxcelle sauce, smear that all over the inner side of the meat, then put spinach and shredded aged white cheddar, then roll the roulade up, tying it with butcher twine, doing butcher kntos every 2 inches or so and one final loop going lengthwise. Sear outside and cook for 30 minutes at 425 in oven, or until done. Rest for 10 minutes, then cut and serve in inch sized slices.

First picture was taken at an odd angle that made it look more like a loin I think, it's obvious in subsequent pictures that it is in fact a ham (though still not center cut like the label said) but it took OP a gorillion years to post any after the first one because he was too busy contemplating suicide

OP, I still advise you to buy a cookbook, and the Constance Spry book I suggested gives a lot of details on basic “how to cook” stuff type advice, advice on cuts of meat etc, as well as plenty of recipes. Also in the future try going to your local butcher who should prove knowledge on cuts and what they are for etc.
