Other day anon inspired me to try cooking deenz into my tomato sauce. However I realize now after prep work, idk when the deenz go in. After the onion with the garlic maybe? With the tomatoes? At the end? Any recommendations?

I use them as a base for sauces, for tomato sauce I start with a generous amount of olive oil and fry 2 or 3 deenz, then fry off onions, then brown garlic, then pour in tomato puree. Of course salt and pepper throughout to taste, you can also add basil oregano or any spices you want at the tomato phase, then let stew with a lid for awhile.
But that's just me.
Starting with the deenz gives a great base, you can also use chovies.

Hmm, I used the oil from the tin think that should be enough? Chovies is actually what I was originally told to use by some wop at the pizza shop though. I'm just using deenz cause I always have em on hand

Usually that oil is poor quality olive oil or even worse soybean oil, and regardless it isn't enough I usually get deenz in water cause again, the oil is shit, and you want enough oil to flavor the whole sauce so think about all the stuff going in and how those flavors can overwhelm the olive oil you want balance, so you need a fair amount, it'll look like too much at first with the deenz, but frying the deenz in said oil will also infuse the oil with the deenz flavor, so win win. Oh and don't go high heat, you don't want to rush it.

Notes taken. I did have to add olive oil but unfortunately I had also found out someone I'm cooking for is vehemently against any fish so I've skipped it this time other than the oil which I'm just didn't tell them about cause it's not an allergy reason, picky eater. Anyway that's good advice, I think I understand it all. When I'm finally just cooking for myself I can't wait. Sauce was still good anyway.

Honestly I usually use fish as a base and people that don't like fish don't notice, not to sound like a faggot hipster but it's more the taste of the sea than fishy once all of it is combined. The other flavors mellow it out so it's not a strong taste like just eating deenz, it's a base you build onto with complimenting flavors.

I understand that, but that's also why I didn't tell her about the oil even. You know how picky eaters are, if they know it's in there they're gonna say it made it taste horrible to them. If they don't know, they'll actually taste the dish.
Btw, I've nothing against picky eaters I do the same illogical nonsense shit somewhere in my life don't think I'm picking on you guys. But it's true.
Matter of fact I remember my grandma trying to trick us kids into eating veg. Was really funny to my 5 siblings as we all love veg and she'd act like she had to trick us by doing wild shit putting it places it doesn't belong and ruin the meals she made for us ironically.

My favorite uncle was a picky eater (raised by that grandma). He joined the military and ended up stranded with no supplies for months over seas. He actually did have to survive on bugs and shit. Used to say, "you'd be surprised what tastes good when you're actually hungry"
