I made the Poulet Gaston Gerard, was yummy. (I know, too much fucking breadcrumbs) With the extra sauce I poured it over pasta and had a nice side dish

Is that pulled pork? I love that stuff. Not hype on the boiled or steamed carrots though. Get some tortilla wraps in anon, can put them both together to make something that'll make you feel a bit better! Bonus points for that dried instant veggie rice stuff to put on the side/in the wrap.

also, the carrots are boiled, for what that's worth. i have learned to boil a mean carrot.
i sincerely appreciate the suggestions and would enjoy them, i'm sure, but i'm cutting out the "side" component of my meals lately - just meat and veg.

You made me smile but this is also a real thing. Over boiling makes things into mush, underboiling just gives you warm wet raw food. There's a bit of an art to getting that nice snap while still being cooked through. Many a mother/grandmother has served us all some boiled to hell vegetables but it's usually served alongside some other food that they focused on while that was in the background, so it's all good.

for sure.
my strategy is fairly simple
>fast boiling water
>no salt
>order the carrot pieces in groups from largest to smallest (usually about three groups; yes i realize this is autistic)
>add largest carrots first
>progressively add smaller carrots at appropriate intervals, typically giving the preceding group ~30 seconds to 1 minute extra depending on the size difference between groups
>in general, the largest carrots get ~5.5 minutes, the smallest get ~3.5 minutes
that's how i make carrots

Honestly you sound like you'd do well in a busy kitchen. Keeping everything under control and organised while also making everything at the same quality so people have similar experiences and know what to expect is important. The other most important bit is speed though.

does sound satisfying though. definitely a potential position for a type A autist like myself.
as for the turning orange thing, it is a genuine concern. sometimes i'll eat up to 5 lbs of carrots a week, and therefore i'll try to vary the carrot colors to reduce the likelihood of my turning orange.

Keep it. Forever. Working from home is so much comfier and even cheaper because of no car/transport costs. My favourite bit is getting up a little later though.
Working in a kitchen can be satisfying, but it does also depend on where. If it's a canteen and you're cooking then serving people - complete shit. If it's a busy restaurant you'll have no time to do anything for yourself on working days and are exhausted constantly. If it's some chill little place then you get a nice no rush comfy thing going on but the money is probably crap. Keep your home job, cook as a hobby, enjoy life.
