Vincenzo is almost always right in this video.
The only thing I don't agree with is the cured meat suggestione he make. Guanciale is the right thing to use but he's right that is really difficult to find guanciale in some country, let alone *good* guanciale which make a enormous difference.
The correct ranking for meat in carbonara is
guanciale > pancetta > bacon > prosciutto

ASide from that, Vincenzo is righta and Marco really make such a shit version of carbonara to the point that makes me wonder if he's actually able to cook at all.

Using cream is also bland as fuck, that's why you need to compensate with stock, adding flavours that really don't belong to carbonara

I'm ignorant for thinking like this, but I often wish that the Italians had gone back to speaking Latin after the creation of the modern Republic. It would have helped; I know it would have helped. If the Jewish diaspora could revive Hebrew as a spoken language in the 19th century, I fail to see why the unified Italians could not have done the same with Latin. I know we're supposed to think of Italian as *lyrical* but I cannot help disliking it some of the time, when I see videos like this. Whereas I have always loved Latin.

Language has an impact on the psyche of the one speaking it. It's only a feeling, but I reckon Italians would do better in all areas if they spoke Latin rather than Italian. It would also help unify the nation to a greater extent.
