I start by substituting canned organic chicken breast. I empty 1-2 cans into a bowl and sprinkle with herbs, usually some mix of basil, thyme, oregano, rosemary or sage. Then I add thinly sliced green onions. I could add sliced pickles but I don't. I do add 1-2 dollops of organic mayo and then mix it up into a paste.

I eat this paste with a spoon, and don't even bother with bread, toast, or crackers.
