They're basically optimizing for cutting performance by making the knife really thin but also making it really tall so there's a bit of weight behind the edge. Not that it's super heavy but if its sharp you essentially lift it and and then the knife cuts down on its own. Has the side effect of keeping your fingers far away from the edge too.

How has nobody mentioned glass knives?

They were a thing for a few years back in the day (1920s~1940s). Thanks to advancements in glass tech they were quickly becoming a popular choice for cutting acidic foods that would mess with steel blades. But after they came out stainless steal became a thing and they got abandoned almost overnight. As someone who studied glass in college I would love to see a modern version. But many of those characteristics are surpassed by new ceramic blades knives which you can buy, or not worth it given the relatively low cost of a stainless steel blade that can handle things like tomatoes.

I got one from an antique store, but I don't use it because it has some small chipping and it likely has uranium in it.

Glass is not old or busted, it actually outperforms everything else and is the future.

We just have to have perfect manufacturing on the atomic level to it final application dimensions to unlock those properties. Mono-crystalline Sapphire is just the intermediate technology for now. This is why we need to work more on plasma deposition with atomic ion resolution in a zero G environment, we have most of that tech already. We just need to refine it and increase the manufacturing speed a few thousand times faster. Sadly the tiny glass lab on the space station is not enough and is mostly focusing on optical fiber draw for applications like faster internet lines. Theoretically a glass knife is the best thing you can have, although there is now debate given schwartz carbon is now theoretically a thing.

Realistically we'll probably just end up using a nano laminated schwartz carbon and iron with additives to make some kind of ultra steel as that will be cheaper and more compatible with existing tech. Then your limited factor is the insane energy need to make it, but if pop sci is believed that is just a few years away as part of the carbon revolution with graphene and all the other allotropes of carbon. Plus the iron helps deal with problem of the blade being too light weight, which is a real issue with any potential glass long swords.

As to why they don't put the instructions on the knife. Simply put that is not possible, as doing so would make it less of a knife.

Engraving instructions would create stress points severely weakening the blade. While adding instructions to the surface would make the cross section larger and increase side wall friction when cutting. Literally all the changes you suggest would make the blade less effective at being the blade it is. If you want to read, you read from a book because it is better at that function.
