Just put a lid over the sauteing onions, peppers, celery, garlic etc it cooked in 1/3 the time by steaming..

Brown, deglaze, cover, steam, uncover, cook off liquid at higher heat while tossing to color everything evenly. Steaming should only take a minute or two for most veggies. Can use for meat too - I do it all the time with head on shrimp deglazed with sherry. Try it out.
