Is the humble London broil currently the most underrated cut of beef? They are:

>often relatively inexpensive
>very versatile, good for anything from seared like a steak, baked/braised or cut up for stew/stir frys
>strong, beef flavor and relatively lean
>not ruined by hipsters yet and made expensive

I have been buying these bad boys a lot lately. My favorite way is either to sear them and cook like a steak but cut up for a crowd since you get everything from well done to medium rare in a single piece or to marinate, grill and cut I to strips and serve with sauted peppers and onions for fajitas.

For me it's beef cheeks, you can't even buy them in normal stores except maybe in the Hispanic section. Tons of gelatin and flavor, need to cook the SHIT out of it for it to become edible, makes excellent Burgundy style beef.
