Victorinox fibrox or Mercer, they're cheap, good steel, come sharp and can be easily resharpened. As far as sharpeners get a double sided whetstone with a low grit side (600-1000) and a high side (3000+) and learn to use it, if you want cheaper and easier get a cheap pull through, it's not great but it works. Avoid electric sharpeners.

Also ignore the anti Fibrox autist, he's aggressively contrarian for the (You)s and shows up in every knife thread.

Here's a secret: A 4 inch serrated steak knife will do 99% of the cutting you will do for home cooking. A long chefs knife is usually overkill anyway. Let me tell ya anon, as a friend. I've met many people in the bay during my internships who worked in tech and are retired in their mid/late 30s with enough money in the bank to ensure their great grandkids have enough inheritance to practically buy a house with.
Wanna know what, basically all of them were unhappy and lost. But all their life they never actually figured out what makes them happy. And even after graduation I'll know to look for a job that has real meaning, not just a salary.

also in my knife-block are two Ottermesser industrial-knives I got direct from their website along with a mercator. One 6" one 7" I believe, plastic handles. they're really more for like meat-processing-workers than anything, but as such are not priced for the flashy-chef-knife market. these things slice like The Real Deal though.
I'm precious with the big one usually only using it for carving large roasts and such.

I work at a kitchen that supplies meals to people in programs who are getting off the street. It’s not just free meals to the heroine junkies like the ones in SF, it’s people who are getting their shit together to have a slightly better life.

buy a straight razor. surprised, right? you can get a higher quality blade for less, like, for exampke, a $200 stainless steel straight razor is going to go way beyond any $220 knife.
you'll have to hold the blade more this way too. no handle-no problem. it'll make you a better chef as you'll get more precise cuts.
anyway you'll also want to buy a file to sharpen your razor. super cheap, super easy.

stropping is a real meme practice tbqh. stropping is just a fancy name for the specific system (ie. using a strop, which is often a piece of leather) used to very gently brush off any leftover bits or burrs left by a sharpening process without being able to actually grind the metal down. stropping without sharpening really does nothing other than *potentially* ruin an edge

all sharpening processes requires removal of material, and will eventually wear away the entire blade, especially if done carelessly (see: >>16601067 ), but that's how it gotta be. stropping ISN'T supposed to grind away material

therefore sharpening stones aren't interchangeable with stropping, at all, but I'd suspect that a sufficiently careful and thorough sharpening process on a proper blade edge quality steel will make the act of stropping at the end more of a liability than a benefit.
stropping came about with the regular practice of having a lower quality steel that needed it's edge redone very frequently, then as the practiced user is about to use their blade, they give it a quick last strop to finish the sharpening work by effectively brushing off any remaining burrs and such.
it's since been misunderstood and now meme companies run by soi manchildren will sell you a blade with a strop kit but no way to sharpen the dull edge they shipped it with.

I strop my razors and knives on a 16k shapton. Just a few passes once a week/between shaves maintains them once you've got your blade geometry set. Other than that, balsa + compounds, then finishing on oiled leather does wonders keeping an edge polished and straight between sharpenings.
