Anyone else pickling atm? It’s peak cuc season right now so I got this batch of lacto-fermented pickles going.
I don’t have a crock so I’m using a vacuum bag like noma recommends.
It’s also hanging because the gas is building up and some of the pickles were poking out of the brine.

hey anon. i used to can pickles with my pops every year. it was our tradition to go to the farmers market around august, buy a bunch of cukes and then wed can over a day after we let the cukes brine in salt water. he has a really good bread and butter pickle recipe that is one of the most unique pickle recipes ive ever had. i miss him. hes not dead, but he lives a few states away from me and its hard to see him as much since him and my mom divorced. i hope u have a good weekend and make some good batches anon.

I don't think it's too bad, the name brand foodsaver bags don't have any of the estrogen-like byproducts or plasticizers. But I'd still rather be making these in a proper pickle crock

pickle is different from a ferment. they close but one uses salt to kill bad bacteria and the other uses vinegar to prevent yeast/bacteria from getting out of control. a vacuum sealed bag is good for a ferment but not good for a pickle.
