I will be making a Mexican inspired grilled cheese for lunch. It will be a flour tortilla folded in half with melted Mexican cheese, some leftover pico de gallo, beef, and some fresh cut tomatoes and jalapenos. Here's my place, after being fully mised en.

Looking mint. The stuff on top here is what fell out as I transfered from skillet to baking sheet. These will go in at 350 for about 5 min to melt the rest of the cheese. Tortillas cook quick, these were only in about as long as it took to add the toppings and cheese.

I haven't tried cheddar yet but my favorite cheese for quesadillas is mexican manchego. It has a buttery flavor and is also very melty and oily.
