I have been a Chef for over 20 years. After this past year and a half, I just can't fucking do it anymore. There are a myriad of reasons as to why I am leaving the industry but mainly these are the main reasons
>impossible to find employees who give a fuck
>the ones that you do hire have no initiative to help the restaurant but are only there "for a check"
>there is noone to develop anymore, nobody cares enough to impart the time to turn them into a chef that you could hand the keys to the restaurant too
>they are all self entitled pricks who feel they should be making 30$ an hour for chopping onions and working a station
>the servers are even worse
>the supply chain issues
>the self entitled guests who don't understand why "you can't get lamb" and then demand a discount
And it is all on me, the executive chef to full in the holes and bring these assholes together for a somewhat recognizable service.
It isn't anything close to what it was even 4 years ago. This entire industry is fucked. I had to fire a guy that I FUCKING LIKED tonight because he told me "he didn't give a fuck" about putting dishes up in a timely manner.
I can't fucking do it anymore. I can't work 15 day stretches anymore and neglect my family for selfish fucking assholes who only care about themselves.
I have been in fine dining for 11 years of my career now and it is in dire straits.
I've accepted a position that pays very close to what I make now as a acct manager for a large food service company. It is 9-5 m-f. I've never had this type of job before and I am terrified, but I am going to do it to the best of my ability.
I am putting my notice in next week and I had to tell somebody, so I am telling you faggots over here on /ck/. Goodbye chefing. Forever.
I'm sorry that this happened to our industry.
I just can't do it anymore.

It honestly sounds like you're a terrible manager.

Why would a new hire go above and beyond, when they get paid the same? It's not their job. It sounds like you want people to internalize the goals of the business as if it's their own, when that's not how being an hourly rate employee works. They work for money, not to grow and take responsibility for a business whose sole end is to profit off their labour.

You call people selfish assholes, but it really just sounds like you're not paying people enough, expecting too much, etc. Probably because YOUR managers are putting too much responsibility on YOU.

Maybe you'll do better in a new industry.

Also you sound like a S.W.E.A.T. pledge faggot.

There is a difference between working for a check and having a passion for your industry. People who work for a check in my industry do not move up. It takes an extra level of caring to run a restaurant of high caliber. Someone just "working for a check" would let the needs of the restaurant suffer for their own personal needs. This would make the restaurant become 2nd place in its employees lives and therefore become shitty, thus rendering it unprofitable. This would lead to paychecks bouncing and the "here for a check" people unable to cash it because noone cares to make the restaurant a great place to eat. It's what people like you do not understand. It takes certain people to sacrifice to make the money machine flow. Obviously you don't understand because you have lack of experience in the matter

Who gives a fuck? It's not their restaurant. They do alienated wage labour, and you, their manager, expect them to internalize the ends of their employer as if they are one and the same. When they aren't. Their goal is to make a wage, your/the businesses goal is to extract the excess value/profit their labour produces. This is capitalism.

Sounds like you need to pay people more, attract higher skilled employees, etc, give incentives rather than just impotently calling people lazy and quitting/whinging.

This industry is a soul sucking leach and 50% of the people in it have extreme Stockholm syndrome to the point they get angry at other people with normal jobs that pay fairly and give normal hours.

Here's a little thought experiment I did that convinced me that hospitality is a total fucking joke. Think about all the time, money and hardwork you've put in. For me that was:
>11 years
>mostly at the top of the finding industry, >working 60h weeks, minimum
>working every weekend
>working public holidays, christmas, NYE

Then calculate how much you got paid.
>roughly 450,000
>still get treated like shit.
Then estimate that pay and position in any other trade, electrician, plumber, painter what ever.
>1.2 million
>probably own my own business
Hell I'd be better off working at most unskilled minimum wage jobs. I'd have more money and I'd be working better hours.

Add to that, this job breeds aggression, addiction and social isolation. Fuck being a chef, its just a time consuming way to become poor and lonely with an added 50% chance of become an alcho and druggie.

I don't care lol. You seem to think there's an inherent need for a restaurant to be "successful", as if it just MUST be done, as if it's an inherent good or some shit.

I work for a company for labour. I don't give a fuck if it is successful or not. What's that got to do with me? If the company profits, grows, or not, that's nothing to do with me. It's not my company. I don't benefit from it's success, the shareholders do. My labour is literally just a tool to deliver profits to it's shareholders/owners/my employers etc. If the company dies then so be it, I don't care. I'll just find another job.

Again, you have just come on here to impotently whinge that your employees aren't internalizing the profit motive of their employers. You've given no good reason as to why they should, instead just blindly repeating that IT MUST BE DONE, THE COMPANY MUST GROW, PROFITS MUST INCREASE, THE BUSINESS MUST BE SUCCESSFUL. You literally expect employees to sacrifice themselves for the profit motive of their employer and call them lazy and entitled when they don't want to. Obviously something has gone really wrong with how your company is functioning when you're losing employees, and yourself. I don't know why you think the solution is to just insult and disparage your employees. LAZY. ENTITLED. Etc. Capitalism is survive or die. Your company failed to attract decent workers, didn't pay people enough, didn't incentivize people enough, etc. Obviously your company is failing to innovate in some way. That's not the employees fault, it's the companies.

As long as people came in and did their work and didn't fuck up too bad there weren't any issues. Never fired anyone, barely even had to tell people to work harder or faster. I didn't expect much and it worked fine. People seemed happy to work there. I'd never expect any employee to sacrifice themselves for the company LOL.

I can't imagine it would be categorically any different to manage line cook wagies verse retail wagies. So I can only conclude there's a problem with OP's management style, or at least the wider company culture.

If you're going into engineering fields, where masters degrees go straight into industry and thus get paid more than academics, yes. If you're in the classical sciences, in which the only widely-available career options are working in research labs or in academia, masters degrees are severely out-completed by PhDs. Because as a research career building tool, a master's degree is just a shittier PhD. In fact, they hand you a master's degree as a consolation prize for failing your PhD dissertation. Entering research-dominated fields without one is a fool's errand. But no, I'm sure the reason why research labs aren't hiring you right out of undergrad is because you're white. Faggot.

Yes, they literally do. You have the right to demand the university print you a master's degree at any point after passing your Ph.D. candidacy exam at practically every institution in the world, regardless of whether you go on to pass your dissertation. For heavily research-oriented professions, showing up with a master's degree is basically arriving at the job interview with an admission of failure

No, because if you submitted a bag of dogshit then you wouldn't have passed candidacy in the first place. Even getting to that point requires being in the postgraduate system for longer than a master's degree lasts. You usually take your Ph.D. qualifying exams at the same time as a master's degree candidate graduates, and that happens even before the Ph.D. candidacy exam. Master's degrees are relevant for industry-facing fields like engineering, or education where it's basically a requirement for getting a job. For research-facing fields like physics or chemistry, that master's degree isn't worth nearly as much.

Non-combat MOS is pretty competitive. No one wants to be a combat role like infantry, otherwise they would have just joined the Marines. The problem with shit like cook is that it has basically no line score requirements so any retard can do it, and since you have so many retards that want that military money but don't want to fight there is a lot of competition. That is why it is best to prefer something like ADA. You have to hit a minimum libe score for electronics, maintenance, technical, and mechanical so it weeds out a lot of competition. As long as you are not a mouth breathing retard it is pretty easy to hit the threshold to be able to get those MOS.

People were dying every day and everytime I got behind the wheel I thought it was my turn. It was safer to kick doors than drive and I almost reclassed into infantry because I knew it would be a lock.

Yeah bro, it is pretty sad. At least I am being real about my life, killing time, having a drink, watching my battery die as I sit in my yard. You are literally pulling shit out of you ass to justify some weird larp. You are probably okay with it because you can say
>GOTTEM
but at the end of the day what did you really get? A retiree that was gonna respond to anyone anyways because he is bored anddrinking? I mean on the really far off chance you ever were enlisted it is pretty clear you washed out as some mental health case. You couldn't do 20, you didn't lose anything, so that leave crazy as literally the only reason the VA would give you money. So you basically tried, and failed, at one thing in life, have mental issues related to it, and now you spend your time online pretending to be best value brand rangers. That is the best possible outcome to this thread. You pretending to be SF at home is literally the least sad outcome.

The alternative to that is you just being an autist who has done nothing, ever. No job, no nothing. Just you living with your parents until you are God knows how old. larping your entire life away pretending that you have value as a human being instead of a welfare nigger who can't even justify himself by dressing it with words like retirement or pension.

Yeah, basically either way your life is really really sad. Is this what you wanted to be doing when you were a kid?

I'm not a libertarian though; I like women older than the age of 20. Working in a kitchen is generally unskilled labor. Unless you're a master chef or something like that, anyone can wash dishes or serve food, so the labor isn't something that's hard to find. Of course if you're hired for the job, you are entitled to pay and benefits that come with it. But don't be surprised if you don't make that much money or have that much negotiating power, because you can be replaced pretty easily if you're a dishwasher.

It's both, ya pinko. Not only do giant megacorps prioritize profits over everything else, but poor people are fucking idiots and impulse buy more on average. There's a reason a lot of people below the poverty line have smartphones and big screen TVs. They are not financially literate.
For a good example, please look into the Renaissance co-op in Greensboro NC. It is closed now, but it was an organic grocery that opened in a neighborhood that didn't have one. It closed less than 5 years later due to lack of profits, and a cursory view of the neighborhood on Google maps shows a wealth of fast food places and corner snack stores. So even with the options near them, some people won't make the necessary choices for a healthier life. They'd rather chase what feels good in the moment without planning for the future. In fact, we could definitely parallel that with megacorps focus on profits; benefits the immediate and screws the long term.

Too fucking dramatic. You're mad because you can't afford a house and 2 cars on a single uneducated income. The truth is that you probably never will, either. You've admitted that you possess no skill that makes you special and because of that you're going to earn the bare minimum that people are willing to get up and go to work for. Right now is actually your time because you can go have your pick of worthless jobs and by the time people are forced to go back to work (if it ever comes) you may have acquired a skillset that they don't have.

I just checked for a few minutes and the cheapest new smartphone I could find was the Moto G3 and that's 199$. Also, a TV is not a necessity and inherently a superfluous purchase. Difference between cars and phones is that they have more necessity than a TV. Cars are how people get to work, stores, bring their family and friends places, etc. Phones are needed to communicate with others. Smartphones in particular can open up more employment opportunities and allow internet access.
What does a TV do that is necessary? Nothing. Plus if you have a smartphone and the internet, why the fuck do you even need a TV? Let alone multiple TVs? I'm not advocating anything except for morons to stop spending their money in stupid fucking ways. If not having a TV is equivalent to asceticism, you need to unironically go touch some fucking grass. Maybe smoke some too, relax for once and unclench those keyboard fingers.
