I’m sick and tired of picky eaters. Yes, people like different things. Younger people tend towards sweet; older people tend towards bitter – really old people, with failing taste buds, need to add extra salt. These examples are far and few between, and are based on the maturity of one’s palate and, statistically, are the closest thing to legitimate differences between how people perceive different tastes differently. For the most part, everyone tastes things the same. Maybe I like artichokes and you like zucchinis, but the question of whether or not they are seasoned enough, or not enough, isn’t really a subjective thing. Something either has too much salt, not enough salt, or is (close to) perfectly seasoned. If someone with a good palate prepares your food, you’re going to like it. If you don’t, you’re either a picky eater, or have something physiologically wrong with you. Sorry for the rant. Here’s a burger.

genetics can and does dictate how how you taste certain foods. see: cilantro, asparagus, numerous easily googlable studies on the effects of gene expression on tastes

on top of that I can state anecdotally that my tastes changed after I spent two years living in rural liberia and eating some of the nastiest garbage I've ever put in my mouth. food didn't taste the same when I came back to the states, with the easiest example being that food that used to be really spicy to me no longer had any kick at all. data point of one but I'm sure people who eat a lot of spicy food can agree that it's possible to dull your taste to the lighter spices through excessive consumption. It's been five years since I've eaten a nasty ass bowl of fufu but my sense of taste towards spicy hasn't come back yet, so I'm pretty sure it's a permanent change in my ability to taste.
