I think OP's gone by now but I'd encourage you to convince the chef to try this recipe https://www.bonappetit.com/recipe/braised-lamb-shanks-with-fish-sauce

Essentially you braise lamb shanks in fish sauce, this recipie uses 250mls of it in one go which is a lot so you'd use it quickly. The recipie speaks to that classic combination of lamb with anchovies.

As it's summer not everyone might want to eat braised lamb shanks but you could strip the meat and serve it in a bao or wrap the stripped meat in lettuce (aka bo ssam). I also think you could braise most fatty meats (pork belly, brisket, duck) in fish sauce. Sell it as surf and turf bao or something.

keep it, that's enough for a long time unless you're making a ton of asian food. you can use it as you would use anchovies or anchovy paste in any dish. a few dashes or so will give something a complex aroma and savory flavor

if you know the restaurant's people well you could let them know about the fish sauce and trade the bottles for a free meal, I did this with an abundance of veg I had in my garden

Fish sauce won't go bad, just take it home and keep it in your pantry. It's mostly used in Southeast Asian food, i.e. Thai or Vietnamese, so you could experiment with those cuisines. I put it on a lot more than that, but that's because I'm a sucker for salty fishy taste.
