If you cook with demineralized water it can reduce the nutrients in food. For example it can cause 60% reduction in magnesium levels. So if you're cooking your beans, or your spinach in water like that you're literally leeching out the nutrients.
As far as drinking it goes, there's a lot of debate about it. I haven't seen much that's conclusive, but you should add some minerals back to it just to be safe.
