Op you build up a tolerance like alcohol or bullets. Once you've got that they aren't bad at all. I chop them up and put them and wraps, salads, etc. I also blend them with vinegar and garlic for a soy sauce.

They're fun if you have friends who are into spicy stuff, but it's next to impossible to use them in a regular dish.
I ended up just microdosing them instead of using chilies, whenever a recipe calls for Jalapenos or similar.

If you put just a little too much into your food it loses all other flavors and is just hot.

They're great minced up in chili with an equal number of sliced, fresh jalapenos and some mashed/minced ancho or chipotle. They're great in a buffalo/wing sauce, but definitely make sure you've got some ventilation going when you toss them in the blender. They work really well with green prik khee noo (the hot, little Thai peppers... bird's eye/rat shit?) and some ginger, lime, and garlic in just about anything - they add a little ripeness and a lot of heat, but keep the flavour fairly SE Asian.
