I never had bad beef broth in pho when I lived in metro DC, and in fact, the local papers that ranked pho, which was very competitive, was based entirely on the broth strength of pho75 vs everyone else, ie not watery. Homemade broths are not oversalted either, since high sodium is a preservative in bought stocks and stock granules.
Sounds like you ate at the worst possible rendition of stock, or maybe you had covid and your palate is numbed.

Know that pho is breakfast food in Vietnam. That stock was simmering overnight and getting richer and richer, and the noodles are added to your bowl at the last moment. It's meant to be a light meal, to wam you up, break your fast, add some nutrition like the lime and chilies for vit C, small amount of protein, lots of bean sprouts, and the fragrance of cilantro and basil.

If you want a rich soup, you get taiwanese ramen, in a rich pork stock, or you do your own shabu shabu and get that broth rich by the time you're done.

This isn't pho. It isn't seved like this anywhere in Vietnam, and yes, there are two distinct versions of beef pho between the north and south. Niggers that eat chicken pho... that's not a real thing. Chicken is used as an ingredient in Hu Tiu if you don't want Pork, but they both have shrimp, squid, blood pudding, different veg etc.

You probably went to touristy places. My usual spots are all small and family owned. Also I tend to get bun bo Hue but I like pho too. That said, I do still find that some are incredibly bland. I've never had non-boring seafood pho and I feel like you're supposed to do something with it (beyond the usual hoisin and chili sauce) that I don't know about.

It's good as fuck. Vietnamese is generally good.

I lived there for many years. North and South have different versions of the soup, but the lime is mostly a southern thing and they squeeze it into the hoisen on the side and dip the raw meat into it. All of the veg outside of bean sprouts, onions, and Thai basil is different than what is sold in America. They don't use cilantro, they use a few other herbs but they are not easily found in America. They also use a lot more marrow and don't skim it off the top of the pot like they do in America. One of my favorite breakfast meals in VN is just a rice bowl of hot bone marrow broth with a diced chili in it and a raw egg. Just drink that thing and get back on the bike. Breakfast of champions.

I can assure you, there are also places in Vietnam that serve shitty pho, and places in Japan that serve shitty ramen.
It’s no different than what happened with sushi in the west; 30 years ago it was difficult to find and great when you did because it was a niche specialty made by people who knew what they were doing, and catering to the few people who knew what it was. Now you can find shit “sushi” almost as easily as a McDonald’s.
You just have to figure out where the good stuff is.
