Bolognese sauce isn't from Bologna. The Italians do this: the name it after a region, but it originates from another region's interpretation of that region. Pro-tip: tomatoes are grown more abundantly in the South.

Spaghetti is an American invention. US soldiers sampled Italian foods during WWII, while back home the wops from Naples tried to figure out how to make what the soldiers liked based on their own style of cooking. The result was blending Bolognese sauce with Neapolitan meatballs, and putting it on thin spaghetti noodles. Nothing like this existed in Italy, but it then became the gold standard for Italian-American food. That's also why American Spaghetti serves the sauce on top of the noodles, unmixed in. It's literally Neapolitan meatballs and gravy on top of noodles.
