claire saffitz is obviously well known. she does know her stuff and I've made several of her recipes very happily. she puts little twists on them in conscientious and designed ways, which I appreciate.
way of ramen is excellent for showing how complicated humans can make a bowl of soup noodles. his attitude is top notch, even if his cooking isn't always up to his own standards
made with lau is like chinese cooking demystified except every video has the old dad. there's quite a bit of vlogging padding at the end which is more focused on personal/family style content, but it's very clear the division between the food content and other content.
