I already regularly cook good food without onions because I cook for my aging parents a lot and they have IBS. so no aliums allowed for them. I use hing/asafoetida as a substitute. there's a lot of things that you can't do with it that require onions, but although I will miss french onion soup and caramelized onions and all that, I'd rather continue accommodating my parents. I use other aromatics, usually carrot/celery/green bell pepper (they can't eat anything spicy either or I'd use a fresno or jalapeno or something) and it's quite good still.
that being said, when I do eat onions I enjoy it quite a lot. they're hard to beat.
if you are forced to give up tomatoes, substitutes that could be used for a lot of similar purposes are, like, amchur powder for the acidity and sweetness, or pumpkin or bell pepper puree for sauces. obviously it's not quite the same, but it's still not bad at all.
