Her recipes don't come out as intended, but that makes it feel more natural. You're not watching a scripted event (well mostly), you're watching a trained professional work through her process as it comes to her. She's not smiling or posing for the camera, she's thinking through her mistakes, trying new methods, enjoying the act of creation. It's enjoyable, and for first-time bakers it's nice to see a professional pastry chef experiencing some of the same problems as them.

She wouldn't be shit in a real kitchen actually making recipes that had to be judged on their gastronomic qualities, she's scattered in her work, quick to frustrate, and doesn't appear to collaborate particularly effectively.
