I think the most broadly accepted vegan dishes are dessert.

Pic related, it's macadamia cheesecake with baklava layers and cranberry sauce and crushed pistachios.

Cheesecake is macadamia and cashew cream with lactic acid and apple cider vinegar for tang, glucose for a subtle sweetness, a little white miso for depth, cooked with some tapioca starch for texture. Baklava is normal except I used high quality maple syrup instead of honey.

I know it doesn't have cheese, the goal is to use plant ingredients to make something with a similar taste and texture to cheesecake.

Lactic acid provides a tang similar to cream cheese, miso provides a source of glutamate, tyrosine, isovaleric and butyric acid like you'd get from cheese.

Glucose has a very similar level of sweetness to lactose so it works well for mimicking natural fresh cheese sweetness, I just add a little extra but keep it relatively tart to offset the sweetness of the baklava layers.

The nuts provide a source of saturated fat for mouthful and consistency and when baked the crema proteins curdle and cause the mix to mostly set up on its own, assisted by the hydration and gelling of tapioca starch.

Macadamia as the primary nut also adds a unique subtle flavor that immediately sets it apart from real cream cheese, but is nice on its own.

I also make a similar baked brie style dessert. Main difference is I add refined coconut oil to the cheese base along with some kappa carrageenan and cook with a candy thermometer to 175F, which emulaifies the oil and converts it to a thermoreversible gel that sets up qt room temperature and melts again at around 60C. It has some added stuff to emulate the more complex flavor of a brie (like using a little red miso and dijon), and is put in a pastry with cranberry sauce and sliced figs before being baked.

I don't have a recipe for the cheesecake one, but you can just use the brie (https://easyupload.io/cwi5fw)) to a similar effect and pour it directly into a crust instead of a mold.

I make the brie one every holiday because my grandparents like it, so the recipe is fairly well tuned. They like a lot of salt so keep that in mind.

The main difference is the cheesecake had more nuts and no carrageenan and was cooked layer by layer which was more trouble than it was worth desu.
