Let's say you have a craft beer place, and you want food that goes with beer. Okay, you've got burgers, chicken wings, and pizza. All three of those are fairly cheap and easy to make, and can be customized a thousand ways each. No problem, stick with that.
Once you start adding tacos, and gyros, and pasta, and soups and shit, you're not doing any of those things well. Who the fuck orders a beer and thinks, "I really want some soup with this!" Chili, maybe, but stick with a small range of related things all done well.

Culminated during a “conference week” when all the major banking entities were in town for something, place was bought out and making mad fucking cash. But we were also short staffed so the bartender had to pull a double shift.

One of the best parts of living in Japan is that I can't recall ever having a bad restaurant experience. A few mediocre ones, but never bad.
Can't say the same for the US. My wife kept seeing Applebee's commercials and her coworkers kept talking about going there for lunch or after work. I kept telling her it was crap food for fat rednecks. She begged me to take her there, so I did. We ordered something from a two for $25 menu or similar. Two bites in, she put her fork down and said "It's just salt. It's horrible." (And Japanese food is pretty salty, so that's saying something). I gave her the "I told you so" eyebrows, put my fork down, and asked for the check.

A big menu usually means that some of the items on the menu probably have to sit around for a while until they get ordered.

Mexican restaurants often have large menus as well, but in their case, most all of their food is a combination of a small set of ingredients. So whatever you order, they probably have relatively fresh ingredients for it.

A thread on bad restaurant reviews might be interesting. Even better restaurant reviews of bad restaurants that destroyed a restaurant.

We had one local restaurant that was really good until the owners sold it and moved back to their hometown. When they owned it, it was very popular and very crowded -- you usually had to wait for a table, especially on Sunday after church. They had a phenomenal buffet.

The new owners weren't nearly as good and didn't may much attention to health and safety issues.

It had a buffet that was okay. If you ordered something from the menu, those components that were on the buffet would come from the buffet.

One red flag was that they didn't have a sign telling you not to bring your dirty plate back for refills. As far as I know, it is illegal in every state to not get a clean plate at the buffet.

One day about ten years ago, a relative of mine was eating lunch there with his co-workers and they saw the manager take food off of a table that was waiting to be cleaned and dump it back on the buffet.

In a mid sized town, news of that didn't take long to get around and people stopped going there. We never ate there again after that.

The funny thing is that the restaurant is still in business. They must not make much because it is rare for me to drive by it and see any cars there at all. If you do see cars, it is generally 1 or 2 cars.

I generally won't stop at a restaurant if there are fewer cars at it than there should be.

But that's not a hard and fast rule. When I lived in one southern city, I would go to one restaurant that had good soul food. The place was in a part of town where you had to be careful and it always closed before dark. Not once did I ever see another customer there besides me who wasn't black.

When I went there to eat, I'd drive around the block one or two times to check out the parking lot and the crowds inside. If it wasn't relatively empty, I'd go elsewhere.

Only one time did anyone talk to me there. I was sitting there one afternoon happily eating my meal when a reasonably well dressed black man who had been sitting with two older black women walked up and asked what I was doing there. I told him that I liked the food, particularly the Shrimp PoBoy and that it was the only place I knew in the entire city where I could get a fried ham sandwich. He then turned around and went back to his table and sat down.

I never had any problems there.
