My Mom did pho only once, finds it something too difficult to eat. I've seen the too much sriracha trick too, or ridiculous amounts of fish sauce going in, and then the broth isnt as good as so and so's broth. The hoisin sauce should be garnish on bites of steak on your chopsticks, but I've seen it used with abandon to season the broth. There's the eww at the raw beef going into a soup no matter how you suggest the filet or brisket are the two best toppings, and they'll do something like "well, I am getting chicken pho instead, or they don't believe you that meatballs are gristly tough, very unlike other cultures.
Or the absolute zero use of the basil, bean sprouts, limes, chili slices. Picky eater bullshit.

OP, some of the best butter chicken wings are the appetizer you may have never thought to order, and might not even be on the menu. You can get a plate of lime wedges to help the salt-pepper blend stick to it.

Newbs also might enjoy at least the lime-ade made with seltzer, or the rich sweetened condensed milk in a coffee drip.
