So I have $130 for food to last me 8 days and could use some recommendations. I broke my leg and have been out of work on short term disability. I just started back and won't get paid until next Friday. Im a welder and work anywhere from 12 to 16 hours a day so I need something that is quick and easy to prepare. I'm also 6'1" 230 pounds and along with my physical job I eat probably 3500+ calories.

I made the mistake of asking on frugal reddit and was basically called an alt right nazi because apparently $130 is enough to last you for 6months and working a physically demanding trade is racist.

You eat twice as much as a mortal man so it's more like $130 for 16 days, and yeah $8 a day is a little thin. Still, fatty ground beef is cheap easy burgers, chicken thighs, eggs, etc. You should be fine as long as you don't lean too much on preprepared food, as tempting as that would be in that position.

Your budget is like $16/day so you don't need to go full rice and beans mode. Personally, I'd do a couple big batch meals you can eat for a few days. Something like a pot of chili or bolognese that you can easily reheat. Lots of protein there, too.
In my area at least, pork is crazy cheap so you could get a pack of pork chops and grill those up, serve with a potato for some additional cheap protein.
There should still be some room in your budget for some convenience food or fast food for days you just don't feel like cooking.

Well $130 should buy you 20kg minced meat or 2.5kg (5.5 pounds) a day.

I think you should buy 1/3 meat (meat, fish, chicken, eggs), 1/3 rootfruits and vegs and 1/3 calories (pasta, rice, potatoes, other).

Potatoes are rootfruits but with much more calories when cooked so i put it in the calories section.

Decent budget to work with, don't have to go full poorfag.
You want filling, relatively healthy, tasty.

Sweet potato and lentil daal. Spicy and filling, also very cheap.

One pan chicken and roast veg with seasonings over some brown rice.

Hokkien noodle stir fry - carrot, capsicum, broccoli with soy sauce, hoi sin, oyster sauce. Garlic and ginger. Cooks in about 10 mins. Add chicken if you want.

Big batch of chili, mince, beans, spices over rice.

Don't take it as a period of starvation. It is an opportunity to try fasting. You don't have to fast all 8 days, though I have done that and more. Try 5. Monday to Friday water fast. Then break your fast on Saturday day 6, go easy on the food. Then eat normally Sun and Monday. The thing to remember is to top off on electrolytes (potassium, salt, magnesium), because when you go into ketosis you will be losing water and electrolytes along with it. If you have your electrolytes, fasting will not leave you weak. You'll be lean and mean.

With that much money and need for calories, i would focus on rice and beans but I would also recommend plenty of eggs, home made no knead bread, and either bigos or gumbo made in a huge batch. Obviously you should eat veggies too, if you have trouble eating veggies I recommend trying to make something like palak paneer, you can easily substitute the paneer with that soft Mexican cheese in every grocery store that comes in those disks. You should have some leftover money to splurge with if you play your cards right.
Most important advice is to figure out the cost of everything including taxes before even going to the store and doing as much adjustment and penny pinching as you can handle. You can try to cut calories a little anyway if it's only for a week, wont cause that much trouble with such a short time.
