Used a french press for nearly a decade but my girlfriend converted me to pour over. I've been expirimenting with a phin filter lately too. I've been using a gravity phin, but after I'm done with the bloom pour, the grounds always tip the top piece over. I can't really tell if this is a bad thing or not, or if there's any way to prevent it without using a screw-on phin. Have any others experienced in vietnamese coffee had this happen?

Again, these are compounding issues moron. The ~8% acetic acid in distilled white vinegar will absolutely eat through aluminum. Miami has some good coffee places, but weirdly less than you'd think a major city would have because the cuban culture just adds enough sugar to kill any flavors that would be undesirable. Your moka pot is good enough, just buy some fresh roasts;, or the supremo bustelo. I cheat some mornings with instant bustelo and hot microwaved milk.
I have tried all the cold brews available at Publix and Stok lightly sweet is their best, followed up by starbucks dark or blonde. They are most like home coldbrew, smooth. Ignore the rest, from chameleon to colombe, don't even bother.
If you want to do some restaurant style pourover, the thai or vietnamese devices are great with new orleans chicory coffee.

I got it because I didnt have any single cuppas in my house. I use the same grind I use for my French press and I find myself having good results. My coffee keeps coming out astringent. I've been going mad trying to stop it. My blame is turning to my old Encore. There's tiny bits of damage to the burrs, and if I run it with a magnet under the chute, I see filings accumulate. I think something is wrong with it, and it might be producing too many fines.
I don't want to send it in for repair, I would rather just get a new unit than worry about any potential problems not being fixed in the repair process. Although, I can't think of anything I'd rather have right now than just another encore.

I also used to use Moka pot, but that's been going wrong recently too. The brew is bubbling and spurting the whole way through, instead of just at the end. And this always results in the brew tasting horrible when it happens.
It's like air is escaping out of the reservoir and into the brew basket... but that doesn't make sense, then how would any water get forced up? I've kept it clean and the seal looks fine. I've just shelved the thing instead of trying a replacement gasket, because I don't think it will work.

Haven't worked with this, but have worked with slow-extraction cold drip. The really slow immersion brew gives it a gorgeous, thick texture. Haven't used nylon filters though so it may be different. Either way, so long as your grind size is fine it should be an insanely even, balanced extraction

I have a Delonghi Dedica. I got an actual portafilter for it to replace the pressurized basket. The Dedica is capable of making acceptable espresso with the right grind, which I have confirmed with a cheap hand grinder. However, my Bodum Bistro is not capable of grinding fine enough. Here's my advice as someone who drinks lots of coffee but isn't extremely into the 'artistry' of it.
Get a decent grinder (don't go crazy), and for learning about coffee/trying different types, just get any fucking pour over set up. I have a ~$18 Bodum and it serves me well enough. I was shocked to find how much of a difference could be made just by taking my time pouring the water. I used to just flood the grounds, then I learned about 'blooming' and shit. I don't get crazy with it, I just give a gentle circular pour, let it drip till the grounds settle. Then another, and then for the third use up the rest of the water. It even makes a significant difference with the cheapest of coffees. Maybe I'm placeboing myself hard, but even Maxwell House tastes mellower and smoother when I do it like described above vs put through a Mr Coffee or whatever.

I like it. Switching between espresso and pour over is easy. The grind 'reference' is a coffee bean - easy enough to see, and you can mark it with white chalk if need be. People have made a 3D-printed marker so it's easier to see what number you're on. I can't speak about burr allignment - the 0 on mine is off, but the coffee tastes very good so I'm not bothered. You will get excess fines on the counter when using the bellows - especially on a coarse setting. It's annoying but not a dealbreaker for me. Generally speaking, bean input matches ground output. I stopped using it when I got my Steepshot.
My usual coffee is made from steepshot or French press, depends on what I want and if on the go which one I want to bring. Both taste great, steepshot requires really hot water though I use 95°C so it needs a bit more time, I usually use 90°C for French press which gives a better taste I find. French press allows me to brew more as well so there's that. Same grind for both, 1:12 for FP 1:14 for steepshot. Trying new beans with hazelnut and cocoa notes.

Help me out.
I want to upgrade my grinder. I live in the US. I mainly use moka; intend to start experimenting with pour-over.
My previous grinder is an Encore, and I wanted to consider bumping up just a bit to something between $200-$300 dollars. Problem is, I got no idea.
I was interested in the Fellow Ode, but reviews gave me the impression that it cannot go fine enough to brew moka (being that some reviews wished it could go finer in regards to light roast pour-over; I figure moka is out of the question).

Grinded a few types of sampler beans so far (Colombian medium roast 1560m, Ethiopian 1950m light? roast, and Guatemalan medium roast from 1950m) in the new Jx-pro and it keeps binding/catching especially on the latter 2. The Ethiopian specifically felt like grinding pebbles and would catch every other rotation with some good resistance the entire time. Is this because they were grown at 1950m and are denser beans, am I just a weak bitch, or is it a grinder problem? It was at 3.8 so I'm not even doing espresso grind.

Only put around 1lb of beans though it so far and only at that grind level. First time brewing an Ethiopian too and while it smelled spicy/herby it brewed to taste vegetal, a bit of a bitter after taste (not horrible), with some earthen flavors. No hints of any of this berry shit the region is apparently known for. I did a 4m steep in a french press as I didn't look at the roast (I was on auto pilot)... pretty sure it was just under extracted but IDK and don't have any more to try.

word to the wise, a bean changes its volume a lot by roast level. so in a moka pot you should expect to up your dose of coffee by about 15% if you go from 2nd crack beans to 1st crack beans, in regular percolation like the phin you can expect shorter brew times from the same dose at the same grind level.
also grinding lighter beans requires more effort, to add to the stale beans espresso conspiracy theory i bet they use darker roasts to extend the life of "profesional" grade burrs.

I always struggle to get my Phin right. A lot of times I get early dripping in the first minute but the brew time still finishes at about 5~ minutes and it tastes bretty good.
The one time I added extra coffee to the ratio to enhance brew time it dripped at about 2 minutes and finished brewing in about 6 but the coffee was so strong and overextracted I had to water it down.

Are you making a single cup for yourself now or are you still batch brewing?
If batch, get a nice french press it'll only run you like $30-50 depending on brand.
If single cup, use a phin like me and be super cool. A good phin is only like $10 and makes a really solid single cup of coffee. Best part is that it's all stainless so you don't have to buy any filters or disposable bullshit for it.
You could also go the aeropress route as I hear rave reviews but I personally have zero experience with it.

No. The phin cylinder is one set of holes set atop the platter which is another set of holes, then you drop the insert. The coffee grinds sit snug at the base of the phin and you bloom them with some hot water before pouring it all in. Once the grinds are wet and hot they expand and become like a sediment at the base of the filter, acting as yet another layer to prevent loose grinds from getting through. I can guarantee you'll have no grinds in your cup if you're doing it right.
