True but you have to distinguish between haute cuisine and regional cuisine. The whole mediterranean have excellent regional cuisine, "every day food". Italian cuisine is among the best here. Therefore, Italian cuisine is excellent.

You're actually right, when you're studying any food related career here in Germany, you have the choice to visit any country (around mid career) as a culture exchange, most of us choose Mexico due to the complexity but also flexibility of their cuisine. Local Mexican food is amazing, it might be not the best looking, but the way they have been cooking ancient dishes is still active.
