All of the vegan/vegetarian food I've eaten at restauraunts or at dinner with friends at their home has relied heavily on spices and herbs, far more flavorful than the french meme cooking where your flavor comes from the components. Soak some cashews in hot water for half an hour and then blend with garlic, yeast flakes, water and olive oil. It's incredibly creamy and you can make a delicious korma with it, along with some pasta dishes.

Fried rice with legumes, onion, mushroom, pepper, garlic, tomato puree, paprika, chili and whatever your favourite spices are is pretty good too but you might wanna add something to even out the bitterness of the paprika.

I ate vegetarian/vegan food that was best than the average omnivore food (especially vegetarian, good vegan food is slightly harder to make)

Just for example, i would ditch a all the fucking bland steaks in the world (not organs tho) for any of these dishes if i have to choose

> tasty lentils soup
> pesto
> A honeydew melon

I also ate some fantastic vegan dishes made by my ex girlfriend, but they were admittedly more complicated to make them palatable.
Also penne arrabbiata sauce are delicious and also vegan
