Most of the sodium is from the brines used for the cold cuts or as processing aids.

Salts (in general not just NaCl) disrupt the attractive interactions in proteins and cause them to unfold. This is how brining works, the unfolding makes proteins "tender" and in the case of cheese, serves for a multitude of things.
