Why do so many adults have trouble being able to cook even the most basic shit, going as far as to fuck up boxed or frozen meal directions?

Image is a simple as fuck meal that I threw together with what was on hand, 90 percent of the work was cutting veggies, not even cooking. Yet, young adults would still somehow fuck it up.

It's honestly a millennial thing. This generation was babied and never taught anything, by parents who earned enough doing menial labor to own a house outright and start a family at 22. Critical thinking should be taught in high school, along with home ec. Unfortunately nobody teaches kids how to cook anymore and they're all learning from clickbait YT garbage - if at all - and critical thinking is only taught at decent college/universities that will put you a couple hundred thousand dollars in debt. So it doesn't teach you how to change your oil, to replace a fuse, paint a wall, do a job interview, file taxes, bandage a cut, replace a flat tire, jury duty, calculate a tip, finance debt, handle your parents' deaths or put them in homes, buy or sell a property, or a car, or insurance...
If schools spend an entire year to drill just "cooking and sewing" it's an admission that school can't teach an adequate library of life skills by drill and rote. Life skills are made by people dealing with life as it comes to them, with the fundamental abilities that they have.

Depends on the country. Here in the east (poland, baltic states, belarus, ukraine, russia) everyone loves to cook, both males and females.
When I lived in UK I did hear about people who never ever cooked anything, only ate fast food and prepped frozen foods.

You have to keep in mind fast food here is still more expensive, and frozen food market isn't that big, yet (also it is a little pricy).
