I like my eggs with extra butter sometimes too, but only if I'm eating them plain with some bread on the side and a salad or something. They just end up with a nice texture that way, a bit richer and softer. But if I'm going to make an egg sandwich or add cheese I'll use just enough butter so they don't stick to the pan.
