Guys i i have tried making pad thai multiple times, but it mostly came out too sour for my taste. Beside using less tamarind paste, point is, lot of recipes add crushed dried shrimp, but i have none readily available on me or anywhere in my city right now, can i sub shrimp paste for it? Is tablespoon enough for replacing, let's say about 20g of dried shrimps? I assume paste should be quite fragrant and intense in taste.

You need the salt that the dried shrimp add. If you can’t get ahold of them, you can either add salt, add sugar, or both. Also make sure that your noodles are good. If you’re using dried pad Thai noodles it should be fine, but if you’re using fresh noddles they may have gone bad and lended a sour taste

I thought it was more about that fishy umami taste that dried shrimps would have added, but then again i guess it is kinda salty.
I was using dried rice noodles that i just let sit in the lukewarm water for like 30 minutes before throwing it into wok. I doubt it's because of them. Thanks anyway, i will try it, some time ago i tried to change it up with shiitake but it just wasn't the same. It was all right tho, just not the fishy the way i wanted.
Maybe i just really need more fish or oyster sauce until i get a hold of those.

I would just order the dried shrimp online, you want that fishy umami taste. Also, watch out for tamarind concentrate from India, it is way more concentrated than paste from Thailand and will make your noodles very sour.

That's what i did, it's gonna arrive on wednesday, but i got a sudden craving for one.
Thanks everyone, that microwave one seems like it might do the trick. If not i am just gonna put that spoon of shrimp paste i got, it's got salt and shrimps only as ingredients so it might do the trick.
