When I point my IR thermometer directly down to a pot filled with hot oil, I get a reading that's consistently about 10 C above actual oil temperature, as measured with an accurate Thermapen. I'm not sure if it's measuring the bottom of the pot through the oil or something, but I think it's still a usable measurement.

Boiled oil is great, I prefer a 50/50 mixture. Always make sure your oil is ~300F before you add water to your mixture so that it emulsifies properly.
