Etouffee is pretty easy to make, it’s a lot of prep and you have to watch the roux but that’s about all the difficulty of the recipe.

If by chance you ever are in Alexandria, Louisiana make sure to go to Sammy Crawfish King. It's run by a Jordanian guy and a Cajun guy who teamed up to make Cajun seafood with Middle Eastern spices. The results are absolutely delicious, flavor is some of the best seafood I've ever had cheap, and it's very reasonably priced: you'll get ten shrimp, an andouille sausage, crawfish boiled potato, corn and spiced mushrooms for around $10.
I'd also recommend that if you are ever in Baton Rouge visit Elsie's Plate and Pie; everything on the menu is good but the poulet pie and seafood pies are the best. Genuine quality cooking.
In either case, hit up a daiquiri place afterwards. Nothing better than hanging out on the levees getting hammered. A lot sucks about life in Louisiana but the food and Mardi Gras are bright spots.

Winters are wet, summers are hot with 95% humidity. If you don't like fishing, hunting, drinking and driving, or bar hopping then it's not the state for you.
There are no mountains or enjoyable places to hike. The weather is too shit to want to hike anyway.

On top of that, the state has the highest incarceration rate on the planet and many parishes make disturbing use of inmate labor beyond normal community service to the point I'd call it slave labor. That use of prison labor really shrinks the amount of working class jobs available so options are limited.

crawfish etouffee is my all time favorite, followed by boudin. my grandfather was 100% cajun but came to texas when he was a kid so i grew up on his family's recipes and didn't have much else to go off of (we did eat at pappadeaux a lot, which is good but i don't know what someone born and raised in cajun country would think of it)

The GOP nationally still liked him, so they picked him to give the official Republican response speech to Obama's first State of the Union address. Jindal blew it by being retarded, a key fuckup was him saying that the government was wasting money on "something called volcano monitoring" and going on about that being pointless. As in keeping an eye on when volcanos are about to erupt and turn nearby towns into Pompeii. He was then quietly dropped by the national party.
Jindal tried to run for president in 2016 but got wrecked by Trump.
