There actually is a difference between smashed and mashed.

Mashed = Pressed multiple times until turned into a paste-like consistency

Smashed = Pressed once.

Using potatoes as an example, there is a very clear difference between mashed potatoes and smashed potatoes. Pic related could not ever be considered mashed potatoes by any traditional definition. They are most definitely smashed potatoes.

I don't disagree with you on the avocado thing, though. In most cases, I assume the avocado was in fact mashed.

Honestly? The "OMG Epic Burger-Bar!!" where every "signature" burger is piled-high with a ridiculous amount of decadent-ingredients that sound nice when you read them off a menu, but in practice end up as just imbalanced sloppa on top of a bland half-pound burger patty.
The inch-thick burger patty itself really gets me too, it's a misapplication of the more-is-more concept, with not enough grill-able surface area. Luckily in the past couple of years, I think this trend has been correcting itself a bit with the smashburger format, and a notorious local joint has started offering two-smashed-patties in place of one hockey-puck. Their cubano, the burger with swiss, grilled ham slices, pickles mustard and a pressed brioche bun? Now that I'm here for.

Anything with animals or animal products. It's so needless and it's everywhere. I quit drinking around the same time I went vegan and oh my god. I turn on the tv to watch south park and there are multiple fast food ads and a bourbon commercial. Idk, I just find it gross honestly. My younger sibling has asked me if there is anything that I miss multiple times and I give the same answer, "yeah that was pretty good but there are alternatives for it". Like, ooh I really miss cheese but I go to my market and there's vegan pepperjack, gouda, shred, etc. It's pretty good too. I really want to get around to making a vegan grilled cheese one of these days. I just wish people were educated properly. Like, it's a living being not your lunch. People call vegans entitled when they play god and don't even allow animals to live days or months old. I went 20 something years eating chicken all of the time, even now I'm conditioned to have my mouth water or "miss it" everytime I see a good looking chicken sandwich. However, I'm conflicted because I know now why a chicken sandwich is called a chicken sandwich, because there are dead birds in it, so I'm also repulsed whenever I see one. So, to answer your question, and I'm sorry this was so long but the food trend that is my biggest pet peeve is normalising eating animals.

Sorry to break it to you but veganism is unnatural. It's a condition you must make preparations to grow into because you're denying your body lots of stuff found in meat that require a very extensive and specific collection of plants to replace. Two of my nieces went vegan for reasons similar to >>15716650 and both of them presented malnutrition problems overtime. It's not just that you stop eating meat you need proper guidance into how to substitute the vital nutrients you're leaving behind. In other words, you need to adapt to eating only plants which doesn't so too "natural" to me. They're still vegan and I respect that but now I'm more relieved since they're receiving professional guidance from a nutriologist since they were basically killing themselves by blindly going after anything non-meat. We even convinced one of them to go back to at least eating fish so her system has an easier time.

sheesh, apparently there is no shortage of absolutely absurd plating. I follow so many chefs on instagram yet they all use normal plates lol. Ive never seen anything this ridiculous, even the most forward thinking modernist chefs I know are more refined than this shit. why are so many of them in shovels??

Most real chefs focus on the food, they have confidence in their creations and don't necessarily want a "gimmick" getting the way of that, nor do they feel it's needed.
Unfortunately, gimmicks do drive sales pretty well... and hipsters LOVE shit like mason jars and shovels that remind them of their grandparents or something.

globalism, more importantly, influencer culture. not only is it stupid because people just eat stuff to feel hip, but it makes people insufferable, everyone acts like they are scholars on international food now. Also, since people try to start making it, you end up with real recipes hidden under mounds of food-blogs. luckily I have a secret method that not many people use to get the good recipes.

I always thought mouthfeel was different than texture. like butter is a smooth texture but a coating type mouth feel.
>>15713848
never heard of people talking about tanghulu. but I'm not surprised. globalism was a mistake and China should have had tighter control on their internet to let less stuff get out to the west.
>>15721313
not only that, but instagram actually ruins places. for both food and location in the world. if someone takes a picture of something and it gets a lot of likes, people are bound to show up, usually ruining the entire place, culture, experience.

Why does it matter?

why would you say something like that and not share it, do you think doing something like that makes you sound cool because to me you sound worse than the hipsters that consider themselves an authority on foreign food because they made some tikka masala or birria. Luckily I too have a method of getting good foreign recipes and its called finding them in their native language and translating them

thats a good one but not as bad as the mustard meme. keep that shit away from my food.

yea idky I didn't mention it after. but yea native shit is the way. also if you are willing to research, using the search engines or forums they prefer while doing it. but yea, that truly is the best way since you pretty much know that at worst it's a mom's meh recipe from that area, but still based on what they eat.

People don't go gluten-free because they think it's nutritionally healthier, but because they think they have some kind of food allergy or intolerance that vaguely affects them.
Also, you should be glad that gluten-free has become trendy, because up until half a decade gluten-free noodles tasted like cardboard boxes.
