If you're moving there why would you need to quarantine in a motel? Can't you just go to the house/apartment you're moving to and quarantine? That doesn't make any sense, it's not like if you tested positive they can refuse to let you move in, as it's against federal law for a landlord to even ask any questions about medical history. Unless it's some third world shit hole with no civil rights laws, why the motel?

Eat what you like to eat normally.

Get an ice chest so you don't open the fridge as much and to give you room for things you might be fine thawing in the ice overnight, like drinks. This chest will be your bags of ice, drinks, maybe some things like lunch meat and cheese.
Hotels are boring for food. You'll want some popcorn for all your mindless TV watching, guess you should go with fiddle faddle or Cape Cod cheddar. Salsa n chips.
PBJ is easy mode, don't forget the milk, and add cereal to your cart. I'd go for a pallet of starbucks double shots, and a box of yogurts and a bunch of bananas or bag of apples or mandarins.
You will not want to do dishes, so some paper plates, spoons, microwaveable disposable cups.
Single serve items if you can, like packets of mayo, a couple subs that can go more than 1 meal (if delivery), so you just keep pitching your garbage not worrying about rewrapping or bagging opened items.

Dehydrated vegetables are pretty okay in a pinch. They can add a lot of variety to your lentil / bean soups.
If you have a dehydrator you can pick up a big thing of spinach and blanch and dehydrate it your self and then you can add a lot of greens to your dinners which is nice.

Quarantine is just 10-14 days max. You could literally go that long without eating at all and you'd be fine.

Call the motel and ask.
Some motels will also loan you dishes and small appliances, like a toaster or a hotplate. Nothing amazing, all stuff you could buy at Family Dollar.

Your situation is calling out for deenz.

intelligent countries put people into hotel quarantine because too many people would go home, do a few days, believe they're healthy then go out and start infecting people.

having lived in remote places and also having just lived during a lockdown, the hardest obstacle to overcome is psychological, but it can be easy if you do the right things

i would not enter that situation without peanut butter, crackers, cheese, deli meat and pepperoni, beef jerky, various pickled vegetables and peppers, various mustards and spreads, dried fruits and nuts, quality assorted chocolates, alcohol, canned soup and chili (canned soup is the best all-in-one meal *by far* if weight/space isn't an issue), popcorn (both microwaveable and pre-popped), granola bars, energy bars, tuna pouches, hot sauce, instant oatmeal, instant cream of wheat, fruit preserves

if you're going to have internet and a laptop, then you're golden

if not, pencil and paper, deck of cards, dice, fiction, coloring books with crayons and colored pencils, handheld consoles, power banks, batteries

i've probably left some things out, but it's almost time for lunch so i gotta go

bring a ton of raw fresh vegetables, loaves of bread, hummus, spreads, olives, some canned stuff if you must.
you should also bring a box cooler to fill with hotel ice every day and you can keep your perishable food in waterproof bags to keep them fresh.
