Curry. Learn to make the base gravy and you can bang out an achari -my personal choice- before the rice is even cooked. Little mango or lime pickle, spoon of yoghurt and coriander for days. I cook potatoes in bulk, I have a bucket of cubed cooked potato in salt water in the fridge - handful in the curry if I want a curry without rice or no meat.

Also after youve got a few curries under your belt you really learn a lot about spices and cooking times. Try an apple cider vinegar in your vindaloo!
