OK, mediterranean deenz report. I opened some of the Turkish (Dardanel/El Manar) and Moroccan (Sultan) ones.
The Dardanel and Sultan ones had slightly different spices, but similar mild heat and flavor level. Overall they were flavorful enough to be enjoyed on their own. The El Manar ones were just in olive oil, and kinda average overall so I used them for a deenz salad.
The Sultans were much larger and held together well, the Dardanels and El Manar were softer and fell apart a bit more.

Ovalcan is idealcan.

I'm a little put off by the apparent easy open lid and the tomato sauce (the color and lack of surface oil are concerning), however if I encounter this variety at any of my usual retailers, I would be pleased to purchase 2 cans to sample.

Ovalcan deenz are almost always large fish; often saury.

Tips for newbies? They're not fugu and I guarantee that aside from the rankest tin of deenz, you've had worse to eat.
Geez, everyone wants to act like this is complicated. If you've eaten chunk light tuna in water and it didn't totally put you off of fish for life, you'll be okay eating a can of sardines. Get a single can if you're so timid, not a costco bulk pack, of basic king oscars, plain in oil. The skin and bones really don't make a huge difference unless you're squeamish but they have both so get whichever.
Eat one by itself, then add some salt, maybe smoked paprika, play around a bit. Maybe try them on crackers, too, people seem to like that.

As for anchovies, maybe don't eat those by themselves just yet if you have reservations about the sardines.

What?
My neighborhood supermarket carries 3+ species of tuna across 2 dozen different packagings, salmon, brislings, "deenz" in 3 dozen varieties (a sort of catch-all, since so many species can be labeled sardines), herring, mackerel, at least a dozen different anchovy types (flat, rolled, paste), and then we can get into octopus, snails, oysters, clams, shrimps (sad when canned, but they has)...

I do have to go to a specialty store to get squid jerky or bonito flake.

What are you looking for? Canned shark?

OK, Cheap vs Expensive Deenz review:
>Brunswick about $1 or $2 at the store
>Nuri about $10 online with cold shipping

First thing I noticed about the Nuri is that the can is smaller and more densely packed, with less volume of oil than the larger cheaper can. Also notice the congealed fish fat in the Brunswicks, absent from the Nuri since they're not cooked in the can.

The flesh of the Nuri was very firm, and the Nuri fish stayed together well without falling apart, as you can see the Brunswick was a lot softer and broke up while serving. The taste of the Nuri was better but only slightly, the biggest difference by far was the texture, firmness and appearance. The Nuri also had a little less fishy smell, probably on account of the congeal fat and in-can cooking of the other.

Served with deenz sauce on toast, with olives and homemade pickled shrooms. Worth it? Depends on your budget I guess, they're definitely superior deenz to anything I've tried.

>>15666703
Good review. I think Brunswick gets too much hate here sometimes. For 2$ish its the tomato basil and mustard are not bad at all. Nuri will always be on of the goat deenz, but as they say you get what you pay for.

I think the Nuri's would be another step above if you eat them plain, being better in holding together and fishy taste, two common complaints about eating them plain.
If you eat them with stuff it makes less of a difference compared to mid range deenz I think

Depends, personally it’s sultans in olive oil with chili pepper for me, you can see where I said that. I was never a fan of Italian/Portuguese shit in tomato sauce, but that’s meant for adding to pasta, or canned in mustard, and I find it absolutely fucking disgusting when shit gets canned with like carrots and what not.
I prefer olive oil>water for sardines. Now without that heat, it’s really up in the air, buy some plain king Oscar in olive oil, eat on some crackers or toast and see if you like it. Or you can add it to some other dish. I also like to mash em up into rice, and I’ve also made deen cakes that I really enjoyed, but I did that with spicy sardines, though if you do that you can spice to your tastes of course.
So many people I’ve met have expressed disgust and condescension over my enthusiasm for sardines, many people think it’s just flat out nasty, and always remarking on the smell and exaggerating. Personally I don’t mind the smell one bit, but it may be a hump to get over, i smoke a pack a day so maybe that’s why. If sardines taste metallic like the can, that’s no good. So just go to the store and buy some plain ones in olive oil, I’d say try bumble bee or king Oscar, don’t get chicken of the sea, I’m personally not a fan of the lightly smoked shit they have, but if you try those others one and like em go ahead and try it and see if you like it.

Then you’ll probably like em, if you eat tuna sandwiches, I’d say do that with sardines to start, doesn’t spread like tuna ofc. First time I had sardines it was a revelation and now tuna disgusts me, very boring as well. Sardines have the spine intact, if you mash em you won’t even really notice it, as for the texture it’s a bit chalky(?), doesn’t really have a flavor to me, I like eating them, but if that disgusts you, look for a skinless/boneless pack, I believe king oscars sells these, but I like eating em so never would buy.

Trimming is a matter of which parts of the flesh do or don't go in the can.
Gutting is a matter of which parts of the not flesh do or don't go in the can.
Texture is largely a matter of how long between catching the fish (harvest) and processing, plus if the processing is done well (to preserve quality) or merely adequately (to prevent botulism).

Smoking firms the texture and adds flavor, generally in a good way.
If there weren't nuances, everyone would buy CotS and there would be no market for Millionnaires or Porthos.
